You’ll need
Bagged mixed greens (about 2–3 cups)
1 cup pre-cooked quinoa (in pouch)
1/2 jar (8 oz) LEANING R® Roasted Tomatillo Salsa
1/2 cup sliced bell peppers
2 Tbsp pumpkin seeds (pepitas)
Step-by-step
1. Add greens to a bowl.
2. Open quinoa package, fluff, and add on top (I eat cold, but you can quickly heat in microwave)
3. Spoon 1/2 jar Roasted Tomatillo Salsa over the quinoa as your dressing.
4. Scatter sliced peppers for crunch and color.
5. Finish with pumpkin seeds. Toss and taste—add extra salsa if you want more zing!
