- 2 lbs ground beef
- 2 16 oz jars LEANING R Chipotle Salsa
- 3 cups shredded cheddar cheese
- Salt/Pepper to taste
- Garlic to taste
- 10 soft corn tortillas
- Preheat oven to 400 degrees
- 9x13 or 7x11 greased baking pan
Directions: Cook ground beef in a medium to large skillet until brown. Add 3 cups or 1 ½ jars of LEANING R Chipotle Salsa. Stir and cook on medium heat to boil. Reduce heat, and add salt, pepper and garlic to taste. Simmer for 15 minutes stirring occasionally to keep from sticking. Grease baking pan and spread remaining LEANING R Chipotle Salsa in the bottom . Heat tortillas in microwave to make them more pliable to fill and wrap. Fill each tortilla with a small amount of meat sauce followed by shredded cheese, then roll and place side by side in baking pan. Add remaining meat sauce and shredded cheese over the top. Bake 15-20 minutes or until cheese bubbles Makes approximately 10 enchiladas.
