Recipe: Leaning R Salsa Shrimp Rice Skillet

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • ½ onion, diced
  • 2 cloves garlic, minced
  • 1 cup Leaning R Original Hot Salsa
  • ½ teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving 

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add bell pepper and onion. Cook 4–5 minutes until softened.
  3. Stir in garlic and cook 30 seconds.
  4. Add shrimp, season with chili powder, salt, and pepper.
  5. Cook 2–3 minutes per side until pink. 
  6. Stir in cooked rice and Leaning R Original Hot Salsa. Mix well and cook another 2–3 minutes until heated through.
  7. Remove from heat and garnish with fresh cilantro. Serve with lime wedges.
