Recipe: Original MILD Salsa Veggie Grain Bake

Ingredients:

·        2 cups cooked quinoa or brown rice

·        1 jar (16 oz) LEANING R® Original MILD Salsa

·        1 zucchini, chopped

·        1 bell pepper, chopped

·        1/2 cup shredded cheese (optional)

Instructions:

1.      Preheat oven to 375°F.

2.      In a bowl, mix quinoa, vegetables, and half the jar of salsa.

3.      Spoon into a baking dish, top with cheese (if using), and drizzle with remaining salsa.

4.      Bake for 20 minutes until hot and bubbly.
