🥑 Recipe: Mild Salsa Veggie Enchiladas 🌯


1 cup cooked quinoa

1 jar LEANING R® Original Mild Salsa

8 small corn tortillas

2 cups mixed vegetables (such as bell peppers, onions, zucchini)

1 cup shredded cheese (cheddar or Monterey Jack)

Chopped fresh cilantro

Sour cream (optional)

Sliced avocado (optional)

Instructions: Preheat your oven to 350°F (175°C). In a large skillet, sauté the mixed vegetables until they are tender-crisp. Stir in the cooked quinoa and half of the LEANING R® Original Mild Salsa. Warm the corn tortillas in the microwave or on the stovetop until pliable. Spoon some of the quinoa and vegetable mixture onto each tortilla and roll them up tightly. Place the rolled enchiladas in a baking dish, seam side down. Pour the remaining LEANING R® Original Mild Salsa over the top. Sprinkle shredded cheese over the enchiladas. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Remove from the oven and let cool slightly before serving. Garnish with chopped cilantro and serve with sour cream and sliced avocado, if desired.
