Roasted Tomatillo Salsa Fish Tacos

Ingredients:

  • 1 lb white fish fillets (cod, tilapia, or halibut)

  • 1 tbsp olive oil

  • Salt and pepper

  • 6 corn tortillas

  • Optional toppings: shredded cabbage, sliced avocado, fresh lime

Instructions:

  1. Preheat oven to 400°F. Line a baking sheet with parchment.

  2. Pat fish fillets dry, brush both sides with olive oil, and season with salt and pepper.

  3. Spoon half the jar of Roasted Tomatillo Salsa over the fish and bake for 12–15 minutes, until cooked through and flakes easily.

  4. Warm tortillas in a skillet or oven.
