Ingredients:
• 2 white fish filets (like cod or tilapia)
• 1/2 jar (8 oz) LEANING R® Original MILD Salsa
• 1 zucchini, thinly sliced
• 1/2 bell pepper, sliced
• 1 tbsp olive oil
• Salt & pepper to taste
• Optional: lime wedges or fresh herbs for garnish
Instructions:

Preheat oven to 400°F.

Cut two large sheets of aluminum foil (about 12x16 inches).

In the center of each sheet, place one fish filet.

Top with zucchini, bell pepper, a drizzle of olive oil, a pinch of salt & pepper, and a generous spoonful of LEANING R® Original MILD Salsa.
