Zesty Roasted Tomatillo Salsa-Marinated Fish Bake

Recipe: Salsa-Marinated Baked Fish with LEANING R® Salsa
(Perfect with
Roasted Tomatillo or Chipotle Ranch)

Ingredients:
2–4 white fish fillets (cod, halibut, tilapia, or mahi-mahi)
1 jar LEANING R®
Roasted Tomatillo
1 tbsp olive oil (optional)
Salt + pepper to taste
Optional: sliced lime, cilantro, or a sprinkle of cotija

Instructions:

1.     Preheat oven to 400°F.

2.     Place fish in a baking dish, season lightly, and pour half a jar of LEANING R® Salsa over the top.

3.     Let it sit for 10–15 minutes (or skip straight to baking if you’re in a hurry — it’ll still be great!).

4.     Bake for 12–18 minutes, depending on thickness, until flaky and tender.

5.     Spoon extra salsa over the top and bottom before serving. Add lime and herbs if you’d like.
