Recipe: LEANING R® Healthy Kale Protein Salad

Ingredients:

- 3 cups kale, finely chopped

- 1/2 cup Leaning R Original Mild Salsa

- 1 cup cooked chicken breast or turkey (shredded or diced)

- 1/4 cup black beans (optional)

- 1 tbsp olive oil

- 1/2 avocado, diced (optional)

- LEANING R® Original Mild Salsa

- Pinch of salt

Instructions:

Add chopped kale to a bowl and drizzle with olive oil and a pinch of salt. Massage the kale for 20–30 seconds until softened. Add shredded chicken or turkey and black beans if using. Spoon Leaning R Original Mild Salsa over the top and toss to coat. Finish with diced avocado if desired and adjust salt to taste.
