🥟 Recipe: Original MILD Salsa Empanadas 🌮

Ingredients:

2 cups all-purpose flour

1/2 cup cold unsalted butter, diced

1/2 cup cold water

1 jar LEANING R® Original MILD Salsa

1 cup cooked and shredded chicken or beef

1 cup shredded cheese (cheddar or Monterey Jack)

1 egg, beaten (for egg wash)

Fresh cilantro, for garnish (optional)

Instructions:

Preheat your oven to 375°F (190°C). In a large bowl, combine the all-purpose flour and cold unsalted butter. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs. Gradually add the cold water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

On a floured surface, roll out the dough to 1/8 inch thickness. Use a round cookie cutter or a small bowl to cut out circles of dough. Place a spoonful of LEANING R® Original MILD Salsa in the center of each dough circle. Add a spoonful of cooked and shredded chicken or beef on top of the salsa. Sprinkle shredded cheese over the filling. Fold the dough over the filling to create a half-circle shape. Press the edges together with a fork to seal.

Place the empanadas on a baking sheet lined with parchment paper. Brush the tops of the empanadas with beaten egg wash. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. Remove from the oven and let cool slightly before serving. Garnish with fresh cilantro, if desired.
