Ingredients:

4 large bell peppers (any color)

1 cup cooked quinoa or rice

1 jar LEANING R® Roasted Tomatillo Salsa

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup chopped fresh cilantro

Instructions:

Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds. In a large bowl, combine the cooked quinoa or rice, LEANING R® Roasted Tomatillo Salsa, black beans, corn, and half of the shredded cheese.

Stuff each bell pepper with the mixture and place them in a baking dish. Top each pepper with the remaining shredded cheese.

Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted. Garnish with chopped cilantro before serving.
